Preparing the crust
Preheat the oven to 160 °C and prepare a small baking pan (approximately 20 cm × 20 cm), lining it with baking paper.
In a medium-sized bowl, mix 120 g of flour, melted butter, 80 g of granulated sugar, and a pinch of salt. Knead until you get a homogeneous dough, then press it evenly onto the bottom of the prepared pan.
Place the pan in the preheated oven and bake the crust for 22-25 minutes at 155-160 °C, until the edges are lightly golden.
Chef's tip
For a more intense flavor and food safety, use the zest from an organic lemon. Since it doesn't matter if the lemon is organic or not for the juice, you can buy just one organic lemon for the zest, and the rest can be regular lemons.
