Preparing the soup

In a large pot, heat 2 tablespoons of olive oil over medium heat.

When the oil is hot, add the finely chopped onion along with the carrot pieces (washed well and cut into small pieces) and sauté for 6-7 minutes until golden.

Add the cane sugar, a pinch of ground chili, lemon juice, salt, and pepper, then pour in the 800 ml of vegetable broth. Cover the pot with a lid and let everything simmer over medium heat for 13-15 minutes.
Chef's tip
If you want an even finer texture, you can pass the soup through a sieve after blending it.
