Preheat the grill to medium-high heat. If you do not have an outdoor grill, you can use a cast-iron skillet or a grill pan on the stove.
Cut the Provolone cheese into thick slices of about 1.5 - 2 cm. It is important that the slices are thick to hold their shape during cooking and not melt completely right away.
Brush both sides of each cheese slice with extra virgin olive oil. This will prevent sticking and help achieve a beautiful golden crust. Sprinkle the slices with dried oregano, chili flakes, and freshly ground black pepper.
Chef's tip
For extra flavor, you can also add a few fresh basil leaves at the end.
If the cheese is too soft, place it in the freezer for 10-15 minutes before putting it on the grill to help it hold its shape better.
