Cut the beef sirloin into thin slices. Peel the garlic and mince it. In a large bowl, mix the beef with the minced garlic, Chinese 5-spice powder, salt, and pepper. Let the mixture rest for about 30 minutes for the flavors to penetrate the meat.
Meanwhile, prepare the sauce: in a glass or small bowl, mix the soy sauce, vinegar, brown sugar, cornstarch, and chicken broth until the sugar and cornstarch are completely dissolved.
Heat 3 tablespoons of rapeseed oil in a wok or large pan over high heat. Add the beef and sauté for 3-4 minutes, stirring occasionally, until the meat is browned. Add the broccoli florets and continue to cook for another 3-4 minutes over high heat.
Chef's tip
For an even more tender meat texture, you can cut the beef slices perpendicular to the muscle fibers. If you prefer softer broccoli, you can blanch it for 1-2 minutes in boiling water before adding it to the pan.
