Preparing the meat and marinating

Wash the meat, pat it dry thoroughly with paper towels, and place it in the freezer for about 2-3 hours. This step will make slicing much easier.

Meanwhile, prepare the marinade. Crush the garlic and mix it with soy sauce and Worcestershire sauce. Add ground black pepper and chili flakes (or other preferred spices).

Remove the slightly frozen meat and slice it as thinly as possible. Dip each slice in the marinade, ensuring it is fully coated, then place them in an airtight container. Marinate in the refrigerator for at least 4 hours, ideally overnight.
Chef's tip
After drying, cut the meat into smaller pieces for easier serving. Store the jerky in a vacuum-sealed or airtight container for a longer shelf life.
