Preheat the oven to 190°C. Wash the bell peppers, carefully slice off the tops with the stems, and set them aside. Remove the seeds and white membranes from inside the peppers, taking care not to pierce the walls. Peel the potatoes and cut them into thick slices or large cubes.

Arrange the potato slices on the bottom of a spacious baking dish. Drizzle them with 20 ml of extra virgin olive oil and sprinkle with half of the sea salt, oregano, and black pepper.

Preparing the aromatic rice filling

In a large skillet, heat 25 ml of olive oil over medium heat. Add the finely chopped yellow onion and sauté for 4-5 minutes until translucent and golden, then add the minced garlic and cook for 1 minute to release its aroma.

Chef's tip

For an even richer traditional Greek flavor, you can add 2 tablespoons of sweet raisins or lightly toasted pine nuts to the rice filling.

Gemista is a dish that becomes even more delicious the next day, when enjoyed warm or even at room temperature, served alongside a slice of cold feta cheese.
