Preparation method
Wash the broccoli and separate it into florets and stems. Cut the florets into small pieces, and peel and dice the stems.
Bring water to a boil in a large pot, add salt, and bring to a rolling boil. Add the whole wheat spaghetti and cook according to package instructions (approximately 10 minutes).
While the pasta is cooking, prepare the pesto: put the peeled garlic, grated Parmesan, walnut kernels, olive oil, baby spinach, basil, lemon juice, diced broccoli stems, salt, pepper, and half of the broccoli florets into a blender. Blend until you get a homogeneous mixture and adjust the taste with salt and pepper.
Chef's tip
For a more intense flavor, you can lightly toast the walnuts in a dry pan before adding them to the pesto.
